- 3-3 1/2 cups water or chickpea broth

Chickpeas and rice, known in Greece as revithorizo, is a hearty and nourishing dish from the family of traditional meals where rice is cooked directly in the pot with legumes, vegetables, and olive oil.
It is especially satisfying because chickpeas provide plant-based protein, making it a complete and balanced meal when combined with rice.
Revithorizo is most often made with lemon and herbs, though a tomato version is equally traditional and delicious. Carol also notes that spices such as cumin and turmeric are often added for warmth and depth.

Instructions
Prepare the Chickpeas
- If using dried chickpeas, soak them overnight in plenty of water.
- Drain and rinse.
- Place them in a pot with fresh water and bring to a boil, skimming any foam.
- Add salt and the bay leaf and simmer until almost tender:
- about 45-60 minutes on the stovetop
- or about 12 minutes in a pressure cooker
- Reserve the cooking liquid, which adds both flavor and nutrition.
Canned chickpeas also work if you want a faster version.
Build the Flavor Base
- Generously coat the bottom of a pot with extra virgin olive oil.
- Add the onion and a pinch of salt.
- Sauté until soft.
Add Tomato or Build the Lemon Base
- If making the tomato version, add the tomato paste and sauté briefly.
- If making the lemon version, add the chickpea broth or water and bring to a gentle simmer.
- Add the lemon zest at this stage if using.
Add Chickpeas and Seasoning
- Add the chickpeas, bay leaf, thyme, and any spices such as cumin or turmeric.
- Stir and simmer briefly so the flavors begin to combine.
Add the Rice
- Add the rice, salt, and pepper.
- Cover and simmer gently for about 20 minutes, until the rice is cooked.
- Add more warm liquid as needed. The dish should stay soft and slightly creamy.
Finish Like a Greek
- Turn off the heat.
- Add fresh lemon juice, even if using the tomato version, and drizzle generously with more olive oil.
